Loads of Fun in Santa Barbara

We were able to steal away for four days this past week to Santa Barbara- it was delightful! This dog greeted us at the hotel- Maddie came back looking for him the next morning. She loves doggies! Jesse and I enjoyed all the time to talk, play with Maddie, relax, read, and go to all these fun places...
The place we stayed was wonderful- "The Upham".
Jesse reffed two soccer games while we were there. So, Maddie decided to get some of her own exercise.
There's Daddy on the field!
She loves the bridges.
Happy girl!

"Mmmmm"
The Santa Barbara Zoo was a highlight. It's so fun to see how she would react to each animal! We all loved watching the penguins get fed.
The goat thought we had food.
Look at the view the giraffe gets everyday of the beach!
Maddie hatched!
We also went on a beautiful hike- Daddy did all the work carrying Maddie.
My little hiker.
Here she is having her first Starbucks! Jesse ordered her a warm milk with a shot of vanilla! I laughed so hard!
She loved running free!
So dirty!
Jesse had to hold her because she wanted to get IN the lake with the ducks.
Daddy and his little girl.
Every time Jesse refs at UCSB we always come up to this bluff- such an amazing view!

The next morning we went to a Farmers Market where Maddie stopped to smell the flowers.
Later that day we stopped by the Lobster Fest. We didn't get lobster, but had some yummy crab and albacore.
This was a memorable time away- I'm so thankful for my little family!

Pumpkin Patch

Lombardi Pumpkin Patch was a completely fun family trip this past Saturday. The weather was beautiful, and we all had a great time. Sorry for ALL the pictures- I just couldn't decide which to put in! Maddie absolutely loved the Saugus High marching band. They were pretty good!
I love that she walks holding our hand now.
So many to choose from.
Her new thing is to smell things, and go "mmmmm"!
She had to climb the mountain of hay.
Wee...
Check out her face when she sees the cows for the first time! Hilarious!
Very into the farm animals.

This turkey gobbled for us- what a strange sound!

Daddy took her into the petting area. She had no fear.
Beep! Beep! Here come the Johnson's!
Yes, Madison rode her first pony, Dallas.
She loved it!
Her little legs hardly fit over the sides of the horse! Several bigger kids were crying because they were scared, not Maddie. She was just upset when she had to get off!
My sweet pumpkin.

To see pictures from one year ago of Maddie at Lombardi's go here. It's amazing how much babies grow in a year!

Peperdine and the Beach

Jesse reffed a soccer game at Peperdine Friday afternoon. Maddie and I went along for some fun. Maddie was ready to throw the red card down before the game even stated!
There's Daddy in the center- what a handsome referee! We didn't stay long for the game, because look what's beyond the field...the beach! We couldn't resist.
October 2 in California- pretty cool! We practically had the beach to ourselves, and it was a gorgeous day.
Busy, busy girl. When she wasn't chasing the sea gulls, she was carrying around this bucket looking like she was on a mission!
After the game, we picked up Dada again, went to dinner, and back to the beach for the sunset.
The sunset lit everything up a beautiful pinkish color.

Maddie loves being thrown up as high as Daddy can get her. Can you see the full moon between Jesse's hands? What amazing creation we have to enjoy. I am so thankful to God for my sweet family and His creation we get to enjoy.

Maddie Gives Two Thumbs Up

I love to cook, especially in the Fall. Here are a few recipes that our family loves (Maddie devoured these meals lately), and I thought you'd might like to try. Enjoy!

Fennel-Crusted Pork Lion with Roasted Veggies
1 T fennel seeds
2 cloves garlic, minced
4 T olive oil
Kosher salt and pepper
2 lbs. boneless pork loin
2 red onions, quartered
1 lb. small white potatoes, quartered
3 firm pears (Bartlett), cored and quartered

Heat oven to 400 degrees. In a small bowl, mix the seeds, garlic, 2 T. oil, 1 t. salt, and 1/4 t. pepper. Rub the mixture over the pork, then place the pork in a large roasting pan. In a bowl, mix the vegetables, 1 t. salt, 1/4 t. pepper, and the remaining oil. Scatter around the pork and roast until cooked through, about 70 minutes. Transfer pork to the cutting board and let rest 5 minutes before slicing. Serve with roasted produce.

Molasses-Grilled Pork Tenderloin
1/2 c. molasses
1/4 c. coarse-grained Dijon mustard
2 T. apple cider vinegar
1 t. salt
4 (3/4 pound) pork tenderloins
Vegetable cooking spray

Combine first 4 ingredients; brush half of the mixture over the pork. Cover and chill 8 hours. Chill remaining glaze.
Coat grill rack with cooking spray, place on grill over medium-hot. Place pork on rack, grill, covered, 19-20 minutes. Turn once and baste with reserved glaze during last 8 minutes.

Pumpkin Bread
2 c. canned pumpkin
1 c. oil
4 eggs
3 1/2 c. flour
3 c. sugar
1/2 t. baking soda
1 1/2 t. salt
1/2 t. ground allspice or ginger
1 T ground nutmeg
1 T cinnamon

Combine pumpkin, oil, eggs. Sift together dry ingredients. Combine two mixtures, blending thoroughly. Pour into 4 greased loaf pans and bake at 300 degrees for 1 hour.
Note: I often make mini loaves and freeze them to give away as little gifts (they take less time to cook).

Spiced Pumpkin Pancakes

  • 1 1/4 cups unbleached all purpose flour
  • 3 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 1/4 teaspoons pumpkin pie spice
  • 3/4 teaspoon salt
  • 1 1/3 cups whole milk
  • 3/4 cup canned pure pumpkin
  • 4 large eggs, separated
  • 1/4 cup (1/2 stick) unsalted butter, melted
  • 1 teaspoon vanilla extract

Whisk first 5 ingredients in large bowl to blend. Whisk milk, pumpkin, egg yolks, melted butter and vanilla in medium bowl to blend well. Add pumpkin mixture to dry ingredients; whisk just until smooth (batter will be thick). Using electric mixer, beat egg whites in another medium bowl until stiff but not dry. Fold whites into batter in 2 additions. Brush large nonstick skillet with oil; heat over medium heat. Working in batches, pour batter by 1/3 cupfuls into skillet. Cook until bubbles form on surface of pancakes and bottoms are brown, about 1 1/2 minutes per side. Repeat with remaining batter, brushing skillet with oil between batches. Serve with whip cream or syrup.

Spiced Whipping Cream
Beat 3/4 c. whipping cream, 2 T. sugar, 1/2 t. vanilla, 1/2 teaspoon cinnamon, and 1/4 teaspoon ginger in bowl until peaks form. Serve with pancakes, pumpkin pie, or just about anything.

Some Silliness

We were so excited to "bundle" up for our blustery-day morning walk.
We (I) had fun playing dress-up! This dress is a hand-me-down from her older cousins. Maddie wasn't into being Belle. She'd much rather be...
riding her dog topless! She's not really a girly-girl :)
Bath time!
She loves playing with these little plastic whales and other sea creatures in her bath.
Brushing her 9 (maybe 10) teeth. What a big girl!
